Use Pure Fresh Water and Organic Sugar

Water - For best results use pure, fresh water. Make sure the water is chlorine free or your Kefir Grains can be killed. If you live in a city or town you can use tap water but boil it first to evaporate the chlorine and then let it cool to 24-26°C (75-80°F) before using. Avoid using a microwave oven, its best to use a kettle or pot to boil the water.

Water Kefir grains do not do well in distilled or reverse osmosis water due to the lack of minerals. If you use distilled or RO water add a couple drops of mineral supplement (available at natural food stores) or a pinch of grey sea salt. You can also use clean well water if the iron content is not too high. After a bit of experimentation, you'll discover what works best for you.

Sugar - Organic blonde cane sugar is recommended. This results in fast growing, healthy grains and excellent tasting water kefir. A tablespoon of rapadura or sucanat sugar added to the blonde cane sugar is a nice addition. Avoid using bleached white table sugar or honey. Honey is antibacterial.

Equipment

Use clean, dedicated equipment to make your water kefir, this helps to avoid contamination and bad taste. Plastic and glass is preferred. Equipment cleaned in the dishwasher works just fine.

Equipment Required

2 - funnels 15cm (6") and 10cm (4")

2 - measuring cups - 1 & 4 cups.

1 - Large wood or plastic spoon

2 - large glass bowls

1 - fine mesh plastic strainer - I use a 18 cm (7") strainer - smaller strainers are handy for when your grains first arrive

1 - Tablespoon

1 - 500 ml (1 pint) glass jar to get started. Other sizes as required as you increase production.

- Bottles and/or jars with tight sealing lid as required. Bottles can be clear or brown.

- Jars for storing extra grains.

- Cloth and rubber bands for lids - We use mesh cloth bags - Lets the cultures breathe, keeps everything else out.

- Stick on thermometer or infrared temperature gun to monitor temp.

You'll likely modify the list as you go but this will get you off to a good start.

If Your Grains Have Traveled to You

Travel is stressful for kefir grains and now its time to rebalance and rejuvenate the cultures. You accomplish this by completing two water/sugar cycles before starting fermentation. If you have live grains please proceed to "OK, Let's Get Started".

If you Have Dehydrated Grains

Here is the rehydration process for Dehydrated Water Kefir Grains


Mix ½ tablespoon of sugar in 1 cup of non-chlorinated, room temperature water. Add Kefir Grains.

Let this sit 24 hours.

After 24 hours, pour the mixture through a strainer and discard the water.

Repeat steps 1-3 one more time using 2 cups of water and 1 tablespoon of sugar.

Rinse the rehydrated grains and continue at "OK Let's Get Started"

OK, Let's Get Started

In a clean, glass jar dissolve 1 tablespoon of sugar in 1 cup of water 24-26°C (75-80°F) then add your water kefir grains. Cover the jar with a clean thin cloth and hold the cloth in place with a rubber band. Let this ferment in a warm spot 21-26°C (70-80°F) for 48 hours. The Kefir Grains need sugar to survive and will starve if left too long. Water that is too hot will kill the grains. On top of your fridge is usually a good spot to ferment. We have also found that in the oven with the light on is a good place, especially in the winter. Make sure you use an aquarium thermometer and keep the temperature between 24-26C (75-80F)

After the first 48 hours

Drain the mixture into a plastic strainer and discard the sugar/water mixture. Rinse the grains with non-chlorinated water. Repeat "OK Let's Get Started" one more time before moving on. After the second 48 hours, you are now ready to proceed with fermentation, this is where the fun starts.

Basic Water Kefir Recipe - Using Two Stage Fermentation

1 Tablespoon of Water Kefir Grains

1 Tablespoon of organic sugar + a pinch of rapadura or sucanat sugar

1 cup of water 24-26°C (75-80°F)

For Fermentation Stage 1 you can use any multiple of this formula depending the quantity of kefir grains you have. Example: 6 tablespoons kefir grains, 6 cups of water and 5 tablespoons of organic cane sugar + 1 tablespoon of rapadura or sucanat sugar.

Fermentation Stage 1

1. Combine the sugar and water and stir until the sugar is fully dissolved, add the Water Kefir Grains. Cover with a cloth lid and let sit in a warm place 24-26°C (75-80°F) for 48 hours.

2. After 48 hours pour the mixture through a strainer and set the grains aside along with enough liquid to cover any extra grains youmight have.

3. Taste the mixture using a straw. It will be less sweet than when you started. If you want your water Kefir a little on the sweet side, you can proceed to Stage 2 and bottle your water kefir. If you want the sugar to be all used up, then cover and let it sit an addition 24 hours before proceeding to Stage 2.

Fermentation Stage 2

Pour the liquid in bottles along with fruit juice. Orange, Pomegranate, Cranberry, Cherry, Peach and Mango are excellent. Ideally the juice is organic. You can also use fresh made juice. Start with 1 ounce of juice to 1 cup of water kefir and then adjust to your taste. Try experimenting with different juices and unsulfured, dried fruits. Some folks enjoy water kefir without any additional juice or other flavors, this is where you can have fun experimenting.

Seal the bottles with tight fitting lids and let sit 48-72 hours. Test after 48 hours by slowly cracking the lid on the bottle. Be careful here. The contents are most likely under pressure and can make quite a mess if you open the bottle too quickly. If your Water Kefir is ready it will fizz up, you can now place the bottles in the refrigerator and this will stop the fermentation process. If the Kefir has little or no fizz, add ½ teaspoon of sugar or if you have room add more juice and then wait another 24 hours.

Note: If don't want the fizz (carbonation) then refrigerate your kefir as soon as you bottle it.

You can make larger batches by simply multiplying the ingredients and keeping the proportions the same as above.

Now that you've completed your first batch of Water Kefir it's time to start the process all over again using the basic recipe above. Feel free to get creative by adding a bit of dried fruit, crystallized ginger, root beer concentrate or vanilla to the bottle during the 2nd fermentation stage.

What to do with the extra grains?

As you progress you'll eventually have extra grains. Put them in a jar along with the ¼ cup of reserved liquid from the first fermentation stage. Cover with cloth lid and seal with a rubber band. Store in the extra grains beside your next batch of Water Kefir. Once you have an extra ½ cup or so you can increase your batch size accordingly.

Since When Did Dessert Become Breakfast?

I actually can't remember a time when people didn't have dessert for breakfast, but I didn't realise it at the time.

When I was a child my standard breakfast was either a fried egg on toast or some wheatbix with milk and sugar. Looking back my breakfast wasn't perfect but for the times it was pretty good.

I have to admit being a little envious of the children of some friends of my parents. They had either coco pops or sugar frosties for breakfast and access to cola at the family business. But they have certainly paid the price with poor health.

Even today we think of dessert as something just a bit, or a lot naughty. It is sweet, rich and often comes in a large serve at the point of the meal when you really don't need more food.

But here's the problem. Dessert is often a combination of a big serve of sugar, fructose, gluten and vegetable oils. A truly disastrous combination of three of the worst food groups. Driving heart disease, diabetes and obesity to just name a few of the problems.

So now we look at popular breakfasts. Cereal, sweetened, or unsweetened, flavoured yoghurt, fruit juice, toast with jam or nutulla. It sounds different than the dessert but when you look at the ingredients, they are no different.

From a health perspective having dessert for breakfast would do the same job in your body. Both equally bad, although breakfast could be worse because of the possibility to have so much sugar and fructose.

Before you argue the point let's look at the most common breakfast foods.



Flavored yogurt, often low fat. It's either full of sugar, or artificial sweeteners with carbohydrate bulking agents to provide consistency in place of the fat. This is poor quality processed food.

The normal version of PDGFRa protein instructs the FAPs to divide and grow, which is ideal if FAPs try to repair any tissue damage. However, excessive growth may lead to fibrosis. In order to avoid it, FAPs build a truncated version of PDGFRa protein that orders the cells to prevent tissue scarring by restricting any further division.

The research team figured out that the stem cells create a shortened version of the protein, which is not there in the interior portion. The shortened version of the protein hides the external growth signals away from the larger version of the protein. The cells grow the ability to create the shortened form of the protein by identifying and implementing a series of nucleotides. The nucleotide code then instructs the cell's messenger RNA to set up a shorter signal. Consequently, the protein gets truncated.

The researchers forced the FAPs to build the shortened version of the protein in a mouse model. Followed by the process, both young and old mice showed less scarring. If you suspect you have or have been diagnosed with neuropathy, also called peripheral neuropathy, you know it is not pleasant. Suffering from burning, shooting or electric shock type pain, especially when you are inactive is a common occurrence. In my opinion, the worst symptom of neuropathy is the inability to have a great sense of balance. When your feet can't accurately sense the surface you are walking on, you risk falling.

Neuropathy can be a painful, life altering condition. Selecting the proper treatment can lead to progression or regression. You need to choose wisely.

Let's face it, neuropathy can be terrible; I have seen people in my office who can't wear shoes, only flip-flops, due to the amount of foot pain they agonize with daily. Others have given up driving due to their inability to feel the brake and accelerator pedals. Losing your freedom is one of the worst outcomes of progressive neuropathy.

Neuropathy is a progressive problem if the cause is not determined

Generally there are five broad causal categories:



Blood sugar imbalance such as diabetes and hypoglycemia. Your nerves function best when fasting blood sugar is in the 85-99 range and fasting insulin and HbA1c is around 5.0

Amitriptyline, an antidepressant, has its own side effects such as constipation, drowsiness, dizziness and sexual dysfunctions. Many of these side effects sound like the condition itself, so, in my opinion, medications aren't really a great option - and besides they only treat the SYMPTOMS of the condition at best. I believe that you can NEVER drug your way into better health.


Surgery. There are some types of PN that surgery could help with, such as a bulging disc or some other types of stenosis, but these types of neuropathies are usually mononeuropathies that affect only one leg (or arm) and usually only one nerve root, not the more typical neuropathy that we're talking about here. The kind that affects BOTH feet and legs (or hands and arms).


Physical Therapy. If you have muscle weakness, physical therapy can help improve your movements, strength and flexibility - all good for neuropathy. I'm a big fan of exercise, but I've never seen a case where a patient has been able exercise neuropathy away.

Rather than wasting time treating symptoms, taking a root cause approach for neuropathy is prudent and effective

Embarking on a revolutionary approach; one that determines the root cause or causes and seeks to correct the cause can be highly effective. They offer strong resistance to other beliefs or to scientific evidence that proves that these beliefs are unrealistic, and they don't want to better investigate this matter.

They believe that they have the right to believe in whatever they want and they insist on defending their beliefs without wanting to verify if they really are right. They do everything they can to block their enemies and keep defending their erroneous beliefs.

So, how can humanity evolve?

We block our own development with our idiotic attitude because we don't want to lose our privileges. We don't care if other people are starving. We don't care if other people are living in terror. We want to be happy in parallel with terror.

Don't you think that our attitude is idiotic and insane?

We should obviously care about immediately eliminating poverty and terror. We are indifferent to what is happening to most people in the cruel world because we are selfish monsters.

Don't you think that we should change our attitude?

We should show compassion to those who live in poverty and terror. We should understand that they obviously cannot let those who have the necessary conditions of life live peacefully and happily if they are suffering.

Why do we insist on defending the beliefs that combine with our ambitions, without trying to understand the meaning of life?

Why are so many people still defending Charles Darwin's theory of evolution in the beginning of the 21st Century if so many scientists (like Konrad Lorenz) have already showed us without a doubt that this theory is based on illusions?

Because money is everyone's god.

The barbarous modern civilization doesn't care about what is true or not. It doesn't believe in the importance of dignity and religion. Our civilization is atheistic and materialistic.

If a scientifically proven truth goes against the interests of those who rule the world because they have more money than half of the world population, do you believe that the world will learn the truth?

Even if the world will learn it, as we could all learn what Lorenz and a group of biologists had discovered, their discoveries will be suffocated by the propaganda of their enemies.

Nobody cares about the importance of integrity. Everyone on earth is a greedy actor. The only exceptions are the rare saints of the human history.

The fact that we are basically demons with a tiny human conscience means that we are cruel monsters. We merely pretend to have human feelings. We are deceptive liars.

We exploit, torture, and kill those who need protection instead of being human and saving the poor and the weak.

The fact that money is everyone's god while most people live in poverty proves that we are demons, exactly like our wars and our horrible crimes. Greed is a satanic characteristic. We are not ashamed to be greedy while other people are starving because we are crazy.

Don't you think that we need psychotherapy?

Don't you think that we should respect our religion?

Don't you think that we should help one another?

Don't you think that we should pay attention to important scientific discoveries without trying to defend old beliefs or our own products?

We are very, very far from balance.

God is the only one who can cure our mental health problems through dream messages and religious lessons. Science and religion are complementary disciplines. We have to pay attention to everything in our reality.

God is the only one who knows how to organize the world based on wisdom and goodness. We are unable to organize our disorganized world based on our suppositions.

We must learn how to have the behavior of saints in order to understand how mentally healthy human beings must be, and respect God's justice.
