Cuban cuisine is a blend of Spanish, African, and Caribbean (Tainos Indian) cuisines and includes recipes, spices and cooking derived from all three cultures. This results in an interesting blend which tends to be simple, with fresh vegetables, fruits, cassava, beans, barbecued meats and fish. In Cuba, rice and beans are a staple, along with chicken, pork and beef, as in more traditional Spanish and Mexican foods, but combinations and cooking methods vary.

Legendary author Ernest Hemingway spent years in Cuba, writing and enjoying the local cuisine, prior to dictator Fidel Castro's overthrow of the country's government in 1959, shutting down one of America's favorite vacation spots. But Cuban cuisine thrives in south Florida, and venturing into a Cuban restaurant looking for fish tacos, chicken enchiladas or shrimp burritos is an exercise in futility. You won't find them, unless it's greatly Americanized. What you will find is authentic Cuban food, laced with spices, a foundation of rice and black beans and some wonderful dishes featuring plantains and other tropical fruits.Regardless of what Fidel Castro may have flown in from the States for his private dinners, here is a sampling of what tops the natives' hit parade:

National dish of Cuba: Ropa Vieja (shredded flank steak in a tomato sauce base), black beans, yellow rice,fried yucca and plantains, washed down with cold local beer;

Coming in at second place most definitely is Arroz Con Pollo (rice with chicken), as basic as it gets;

Moors and Christians: black beans and rice;

Fried Plantains: a frequent side dish; (ripe plantains have peels that are almost black, so don't let that throw you);

Their most popular and basic spices are available almost everywhere in the U.S. and include bay laurel, oregano, coriander, cumin and pepper. Many sauces have a tomato base.

In Cuba, plantains and bananas comprise 47% and 24%, respectively, of the local production and grown only for domestic consumption. Other tropical fruits produced in Cuba are mango, papaya, pineapple, avocado, and guava. Plantains have never caught on the U.S. as we prefer our bananas, and plantains have a sweeter taste, usually used in cooking rather than just eating raw. They are an acquired taste to be sure, which most Americans have never acquired.

Cuban cuisine can be vegetarian friendly, due to its liberal use of beans, rice, vegetables and fruits, but don't expect to be ordering tofu or any other protein substitute. The majority of Cuban people are poor, so native food can be quite limited without the addition of some type of meat, fish or fowl. However, don't let that stop you from enjoying some of their spicy sauces, salads and rice dishes. Yucca is a popular starch as is corn, but not in the typical form of tortillas as in Mexican food. (And guaranteed you won't be finding any cornbread with butter or hush puppies, also made with corn.)

Although many countries may speak the same Spanish language, that does not in any way ensure they eat similar foods. So venture out and expand your repertoire by exploring Cuban cuisine should the opportunity arise, and don't go comparing it to our Mexican favorites. Havana boasts no fast-food restaurants, but if it did, you can be darn sure Taco Bell would not be among them.

5 Ways To Woo Your Summer With Mangoes

Summer is here, and it brought along mangoes. Easily the king of fruits, mangoes are a cherished must-have for the season. Be it in raw green or ripe orange form, this fruit has its own unbeatable charm when it comes to both savoury as well as sweet recipes. To beat the heat, here are some traditional, yet simple ways in which you may relish the delicious fruit this summer.

1. Raw mango pickle

This is a dish that needs a bit of work, and needs preparations ahead of summer, but once you get it right, it is an absolute gem.

Quick Guide: Chop raw (green) mangoes, add your blend of favourite spices, oil, and salt, dry in the sun for several days until the skin is shrivelled. Have with or between meals.

2. Raw mango sherbet

It is also widely known as "Aam Panna" in Indian languages and is a chemical-free indigenous way of quenching your thirst.

Quick Guide: Roast the raw mangoes directly over a flame, peel the burned skin, mash the flesh, dilute with water, add sugar and salt as per taste. Serve with ice.

3. Raw mango chutney

Another innovation of the Indian subcontinent, this one is prepared as an after-meal dessert substitute. It takes a while to get the right texture, but tastes heaven afterwards.

Quick Guide: Peel and chop raw mangoes, cook in low flame with spices and oil, add sugar (loads of it), stir until a thick consistency is achieved, cool and serve.

4. Mango lentil soup

Like so many fruits, the first peaches were discovered in China during the 10th century BC, and, thanks to early explorers and trade routes, found their way to Persia (now Iran) and ancient Egypt. After showing up in Greece and Italy, they made their way to the city of Marseille, a large port town in southern France, scoring a home run from the get-go. Eventually, like most French foods, they found their way across the channel to England, where Queen Victoria (1837 - 1901) proclaimed that no meal was complete without a fresh peach.

During the 16th and 17th century, France was the self-proclaimed world center for peaches. As was frequently the fashion, when a king took a liking to a particular food, he spread the word. Thus was the case with King Louis XIV (mid-1600s) who ordered hundreds of peach trees be planted in the royal orchards and commanded his chefs to start creating new recipes, glorifying this newfound treasure. No doubt tarts and pastries were whipped up daily to satisfy his craving. To this day, several varieties of peaches, including heirloom, are still grown in the gardens of the Chateau de Versailles.

In 1892, a new dessert was created at the Savoy hotel in London by famous French chef Auguste Escoffier. Named in honor of an opera star, Peach Melba made its debut, featuring the glorious peach with raspberry sauce and cream. (Sadly, too late for King Louis to enjoy.)

A unique Italian cocktail originated in world famous Harry's Bar in Venice, by its owner Giuseppe Cipriani. The Bellini is still popular to this day, as Mr. Cipriani wisely chose not to name it the Harry. Made with fresh peach juice and prosecco, a sparkling wine, its namesake was a prominent Italian painter, not a bartender.

Peaches probably were passengers on the early ships to America. Along with apple, cherry and apricot trees, they were planted throughout the Northeast and along the seaboard, establishing a variety of fruits available to the colonists. Even Native Americans helped spread their popularity during their local travels. Peaches were embraced for their sweet juicy flesh and comprised some of America's favorite desserts, including cobbler and pie. Until canning was perfected, they were mainly eaten in season, either raw or cooked, generously covered with cream. Foodie president Thomas Jefferson had a prolific orchard on his estate and served peaches frequently to his dinner guests.

Although home canning was common, it became a booming industry in the early 1800s, but peaches did not emerge as a commercialized crop until the later part of the century., offering Americans a favorite fruit year-round. Proving to be a popular food for children, canned peaches flew off grocer shelves in large cities where fresh fruits were not as available. Although the state of Georgia is known as the Peach State, the largest grower award goes to California, which turns out the majority of annual peach production, a whopping 715,000 tons per year, compared to Georgia's 36,000 tons (sorry, folks). Another blow to Georgia is their neighbor South Carolina gets kudos from fruit experts for growing sweeter and larger peaches (go figure). Unfortunately for most of the country, due to the delicate nature and perishability of ripe peaches, they are usually picked underripe and transported. If you're lucky enough to have a neighbor who has his own peach trees, be nice to him so he'll let you pick your own. Although popular for eating, their first cousin, the smooth-skinned nectarine, takes a back seat for cooking.

No matter how you slice it, peaches top the hit parade. Available year-round, thanks to canned and frozen, we can all enjoy pies, cobblers and sauces out of season. And if you can find a local farmers market or live in a peach state, so much the better. Your summers are bound to be just peachy.

A large plate of French fries and a medium portion of rice and dal will have different effects on your body, mind and soul. Since food is our main source of energy, it can have a filling, healing or even negative effect on our bodies. Barley, which is a member of the grass family, was one of the first cultivated grains, primarily in Eurasia and Israel, dating back 10,000 years. It lends itself to temperate climates and numerous soils, is hearty and versatile. There are literally hundreds of varieties flourishing worldwide. The first records and archeological digs have unearthed wild barley growing along the Sea of Galilee, as well as along the Nile River in Egypt. But not confined to just several regions, it was also found in early U.K countries, particularly Scotland. Besides comprising a major staple food for much of the populace, it was also used to make early ale and beer, providing malt as well as fermented grain, which was traditionally drunk at meals, including breakfast. After it was surpassed by wheat cultivation, it remained a practical and available grain for peasants, made mostly into porridge, bread and soup. Domesticated livestock were fed a diet of barley when grazing land was limited. Easily stored and combined with other foods, it helped feed mobile armies throughout history.

In the 15th century, barley comprised the sole grain used to brew beer throughout the Holy Roman Empire, which included beer-loving countries like Germany and the Czech country of Bohemia. Along with its cousin rye, these two popular grains were ground into flour and cereal to feed the poor masses. Once wheat was domesticated, the upper classes eschewed barley as peasant food and embraced wheat as their major grain. (Because of barley's nutritional value, the peasants probably outlived the upper classes by many years.) In ancient Greece and Rome, bread was made from ground barley flour and became a staple for athletes. Its fiber content and nutritional value were highly prized.

In Ireland and Scotland, beer and scotch whisky are still made primarily with barley. In the U.K. barley wine (which is actually a strong ale) has been a popular English drink for centuries. And during the 1500s, a popular British folk song immortalized a character named John Barleycorn, presumably sung loudly in numerous pubs and taverns, praising the grain and its contribution to popular libations. In 1993, the popular British singer Sting wrote and recorded a haunting ballad called "Fields of Gold" which seems to immortalize this thriving crop. In the U.S. Jack Daniel's whiskey, the largest selling brand, is made with corn, rye, and malted barley. (note the different spelling of whisky, which is Scottish, and whiskey, which is American.)

Not to be written off as just another starch, centuries ago barley water and tea were often used for medicinal cures, and modern medicine recognizes the grain's ability to help regulate glucose levels for diabetes, provide excellent high fiber and cardio benefits as well. In the U.S., northern states grow the majority of America's crop, primarily Montana, Idaho and North Dakota, of which 25% is used for malting, 50% for animal feed. It is also a popular grain used in coffee substitutes. Worldwide production tops 144 million tons annually, with Russian the major producer of barley, France and Germany a distant second and third. Pearl barley is what most Americans recognize, added to soups and sometimes eaten as a grain instead of rice. Barley flakes make a hearty hot cereal, and barley flour can be mixed with wheat for a full-bodied bread or muffin.

Needless to say, like most grains, barley has been domesticated, cultivated and refined over the centuries to produce far more friendly crops and more uses than its ancient ancestor. Unfortunately, barley is not gluten-free and should be avoided by those with allergies. But for everyone else, a daily helping in some form can be highly beneficial. Consider tossing it into a variety of dishes, kneading it into dough, adding it to salads (cooked of course) and as an all-around grain to add fiber and nutrition to your menus. Barley may not be glamorous, but it sure packs a wallop nutritionally.
